Brie Chili Crisp Grilled Cheese (Printable)

Creamy brie and spicy chili crisp combined in a golden, buttery grilled sandwich.

# What You’ll Need:

→ Bread

01 - 4 slices rustic sourdough or country bread

→ Dairy

02 - 6 oz brie cheese, rind on, sliced
03 - 2 tbsp unsalted butter, softened

→ Condiments

04 - 2 to 3 tbsp chili crisp, adjust to taste

# Directions:

01 - Spread a thin layer of butter on one side of each bread slice.
02 - Place two bread slices, buttered side down, on a clean work surface.
03 - Evenly layer the sliced brie over the unbuttered side of each bread slice.
04 - Spoon 1 to 1.5 tablespoons of chili crisp over the brie on each sandwich.
05 - Place the remaining bread slices on top, buttered side facing outwards.
06 - Preheat a large nonstick skillet or griddle over medium-low heat.
07 - Place sandwiches in the skillet and cook 3 to 4 minutes per side, pressing gently with a spatula, until bread is golden brown and brie is fully melted.
08 - Remove from heat, let rest for 1 minute, then slice and serve warm.

# Expert Tips:

01 -
  • The contrast between cool, creamy brie and the warm, crispy bread edges is genuinely addictive.
  • That chili crisp brings just enough heat to make your taste buds wake up without overpowering the cheese.
  • It's fancy enough to feel like you've done something special, but simple enough that you won't stress about it.
02 -
  • Medium-low heat is non-negotiable; crank up the temperature and your bread will char while the cheese is still firm inside.
  • Softened butter is everything—cold butter tears the bread and creates uneven browning, while softened butter glides on and crisps beautifully.
03 -
  • Press the sandwich gently while cooking so the cheese warms evenly and bonds with the bread, but don't squash it like you're angry at it.
  • If the brie is very cold from the fridge, slice it thicker so it has time to melt before the bread over-browns.
